Coconut Milk Chia Pudding with Apricot-Peach-Coconut Sugar Jelly
Today I will offer you simple, few-ingredients
Coconut Milk Chia seed Pudding with Apricot-Peach-Coconut sugar Jelly.
It is naturally sweetened and so thick and creamy. Loaded with nutrients and perfect for breakfast, a snack, or dessert!
For the Chia Pudding:
To a small mixing bowl add:
3 table spoons chia seeds
and
250 ml coconut milk ( you can use your favourite milk - almond, soy, sweetened, unsweetened .... it is up to you !!!)
Whisk to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it's achieved a pudding-like consistency). It may also be helpful to give the mixture an extra stir once it has been in the refrigerator for 30-45 minutes.
For the Jelly you will need:
3 Peaches
3 Apricots
3 table spoons of Coconut Sugar
1 sachet of clear and unflavoured Gellatine (10 g)
Cut the fruits in small pieces, mix it with the sugar and bring to boil in a sauce pan. Turn off the heat and let it simmer for 2-3 minutes. Remove from the heat. Stir in the gellatine powder and blend the mixture to a smooth consistency. Pour the hot puree in a jam jar and leave it to cool completely (keep the jar opened) !!! Then cover and refrigerate overnight.
Finally just combine the two components in your favourite dessert cups.
Serve chilled with desired toppings, such as fruit, granola, or coconut whipped cream.
