Easy Halloumi Pie
2 eggs
1/2 cup Greek Yoghurt + a good pinch of Baking Soda
1 cup Wholemeal Flour + 1 tea spoon of Baking Powder
If the batter is too watery add 2-3 table spoons more flour!!! It must be the consistency of a cake batter.
1/4 cup Olive Oil
150 g Halloumi , cut in cubes
You can use Feta Cheese in this recipe instead of Halloumi!!! Tastes amazing!
Optional : you can add Sundried Tomatoes ( the best ones I find in Lidl), Dried Spearmint or Feta Spice Mix.
Preheat the oven to 180˚C.
Prepare a small round (mine is 22cm in diameter) baking tin lined with baking paper.
In a mixing bowl mix the yoghurt and the baking soda well.
Add the eggs and the olive oil while beating with an electric mixer. Beat 2-3 minutes on medium speed.
Add the flour and continue beating for another 2-3 minutes.
Cut the halloumi cheese (or feta) in cubes. Stir in the cheese cubes with spatula.
Spread out the batter into a uniform layer in a lined (with baking paper) small round (mine is 22cm in diameter) baking tin.
Bake at 180˚C for approximately 30-35 min.
Let it cool for about 15 min, then cut into pieces.
