Apricot Pie











Apricot Pie


This is just the right Pie for your tea party or afternoon snack ... 
Easy to make... 
You willl need : 

50ml Water 
2 tbsp Greek Yoghurt
A pinch of Baking Soda
150g  Dark Soft Brown Sugar 
2 Eggs
180g Wholemeal Flour
60ml melted Coconut Virgin Oil
A pinch of Salt 
7g Baking Powder
1 sachet Vanilla Sugar
5 Appricots, halved and destoned.
Icing sugar

1. Beat eggs, sugar, the vanilla sugar and the pinch of salt with an electric mixer on high speed for about 3-4 minutes or until mixture has thickened and turned pale yellow. 





2. Mix the water, greek yoghurt and the pinch of baking soda. Add the melted coconut oil.



3. Combine slowly  the mixtures (while beating).

4. Mix the flour and the baking powder.


 Slowly (in portions), while whisking add the flour to the liquid mixture. Beat well.

5. Cut the appricots in halves. 


Preheat the oven to 180˚C.
Spread out the batter into a uniform layer in a lined (with baking paper) small round (mine is 22cm in diameter) baking tin. 


Lay the top of the cake with the halved apricots. Gently press down.


Bake at 180˚C ,30-35 min.
The cake is done when it has browned a bit, the apricots are soft and a cake needle stuck in the batter beween the fruits comes out clean.



Fresh out of the oven, sprinkle the cake with icing sugar. 




 Let completely cool, then cut into pieces.






You can serve it with vanilla icecream or ice tea or coffee ☕❤️๐Ÿ˜Š...
