Cottage Cheese Doughnuts

300g Fresh Soft Cottage Cheese
1 egg
2 Tablespoons Whole Meal Flour
1 Tablespoon Brown Sugar
A pinch of Baking Soda
A pinch of Salt
1/4 Teaspoon Baking Powder
Optional- Vanilla or Cinnamon
Mix all the ingredients together well with a fork until you reach a smooth consistency and a soft dough forms. Shape small balls and flatten them with the palms of your hands. Cook on a non-stick frying pan with LID. You can add few drops of olive oil. Cook them on LOW HEAT until golden brown (both sides) !!!
They are really tasty and you can serve them with yoghurt, honey, sour cream, jam, powdered sugar or wharever you like :) ....
