Wholemeal Kefir Bread

This is absolutely tasty and easy to make rustic bread.... NO kneading, no yeast, no proofing time needed ...






Kefir is an extremely healthy baking ingredient. 

It will produce a delicious and healthy twist for any dish.

Because it's fermented and cultured, it adds both texture and taste to any baked good.







For those of you looking for kefir bread formulae, here is what I have been up to.


Ingredients:

  • 1 1/2 cups Brown Wholemeal Flour
  • 1 1/2 cups Village Strong Flour
  • 1/2  teaspoon salt
  • 2 1/2 teaspoons baking powder 
  • 1 1/2 cups Kefir
  • 2 tablespoons Olive Oil
  • Flour for dusting


Method:

  1. Preheat the oven to 230°C. 
  2. In a large bowl blend all the dry ingredients. 
  3. Add the kefir, olive oil and, using a fork, mix the ingredients together. The moment you have a sticky dough and  no dry bits at the bottom, flour your work surface and tip the dough onto it. Then, cupping the dough between your floury hands, shape it into a round and place directly onto your baking sheet.
  4. Using your scraper, cut a cross deeply into the dough. Brush the  bread with some olive oil or fresh cream.... Bake for 25-30 minutes, 230°C,  until your bread has a beautiful golden crust and sounds hollow when tapped on the bottom.
  5. Let it cool on a wire rack for about 15-20 minutes
