 Pecorino Cheese Biscuits


These are tender, crunchy, aromatic, delicate .... 


The perfect little home made Pecorino Cheese Biscuits to serve with wine, drinks or your favourite holiday cocktails!


All you need is a little time and a few simple ingredients. 


Ingredients:

125g Wholemeal Flour

75g Pecorino Cheese, grated

(Note : You can use mature Cheddar Cheese, grated)

75g Butter, softened

a pinch of salt

a pinch of freshly ground Black Pepper 

1/2 teaspoon of your favourite Dry Herbs

3 tablespoons Fresh Cream

Method: 

1. Preheat the oven to 180 C (160 fan). Line a baking sheet with baking paper.

2. Blend the Flour, Pecorino cheese and softened Butter in a food processor (or with a fork ) until you have a mix resembling fine breadcrumbs. 

3. Season to taste with the salt, black pepper and dried herbs. Add the Fresh Cream and blend again until the mixture comes together in a soft ball.

4. Dust a work surface with flour and roll out the dough to 1 cm in thickness. Use a cookie cutter to cut the biscuits in your favourite shapes and sizes ... 

5. Place on a baking sheet and bake for about 15 minutes until golden and cooked.

6. Leave to firm for about a minute or two then gently transfer to a wire rack to finish cooling.   


Easy to make!
