Tropical Muffins
Aromatic and yummy...
Yes, I know it sounds ridiculous - "Tropical" in January... But...
Recently I am in a "Kitchen Storage Cleaning" Mode... And what I have found there was... some dried and candied Pineapple and Coconut.
Ingredients:
3 eggs
1/2 cup Unrefined Raw Cane Sugar (or more to taste)
60 ml coconut oil , melted
200g dried fruits, cut in pieces (Pineapple, Coconut)
1 cup wholemeal flour
1 1/4 teaspoon baking powder
1 sachet Vanilla sugar
few drops Rum Essence
3-5 tablespoons milk (any kind of milk)
Method:
1. Heat the oven to 180 C.
2. Place 12 sillicone muffin cases on a baking sheet.
3. In a large bowl beat the eggs and the sugar very well until pale and fluffy. Then add and beat in the coconut oil.
4. Add the Vanilla sugar and Rum essence.
5. Add the dried fruits and stir well.
5. Fold in the flour and the baking powder. Mix with a spatula but do not overmix.
6. Finaly add the milk to reach a cake batter consistensy.
7. With a tablespoon fill each of the muffin cases.
8. Bake in a preheated oven for about 20-25 minutes....
9. Leave to cool slightly for 10 minutes. Gently take the muffins out of the sillicone cases and transfer to a wire rack to finish cooling.
Serve with your favourite tea or coffee...
