Wholemeal French Pancakes with Orange Flavoured Mascarpone

 


The perfect thin pancakes. 

Healthier version. 

Quick and easy recipe. 

Elegant and delicious result.




Ingredients:


For the Pancakes:


2 Eggs

250 ml Milk (I used 150 ml kefir mixed with 100 ml water) 

1 cup Whole Wheat Flour

2 tablespoons Light Brown Sugar (I preffer to use Unrefined Raw Cane Sugar)

A good pinch of Salt

1 sachet Vanilla Sugar

3 tablespoons Butter, melted



For the Orange Flavoured Mascarpone:


The zest and the juice of one big Orange

1 tablespoon Light Brown Sugar

150 g Mascarpone

1 teaspoon Honey



Method:

The Pancakes:

1. Whisk together the eggs, milk , sugar, vanilla sugar and beat well until pale and fluffy.

2. Stir in the flour and the pinch of salt. Mix well but do not overmix. 

3. At the end add the melted butter.

4.Leave the pancake batter at room temperature fot about 45 minutes to 1 hour, or in the fridge overnight.

5. Heat a non stick pan at medium-high heat. Once the pan is hot add few drops olive oil.

6. When the pan is hot enough, pour under 1/4 cup of batter (for 30 cm pan). Cook on a midium heat !!!

7. Carefully flip the pancake and cook until it is ready...

Do not overcook! You need soft and light golden pancakes!


The Orange Flavored Mascarpone:

1. Mix the orange juice, the orange zest and sugar in a sauce pan and bring to boil. Reduce the heat and simmer until the orange syrup is thick and caramelized. Stir constantly! Be careful not to burn it. 

Set aside to cool to room temperature. 

2. Mix the cold orange syrup , mascarpone and honey until smooth and fluffy.
