Sourdough Pancakes


Great for Sourdough Discard. 

If you've got leftover sourdough starter discard, don't let a bit go to waste! Try these....

Sourdough gives these pancakes a fluffy texture and delicious flavor.



One bowl…no more than 10 minutes of preparation work. 
Quick cook time.


Ingredients


2 cups wholemeal flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1-2 tablespoons light brown sugar

1/2 teaspoon salt

1 cup sourdough starter

1 cup greek yoghurt

1/2 cup water

1 large egg beaten

2 tablespoons olive oil



Instructions

1. In a large bowl, whisk together the flour, baking powder and soda, sugar and salt.

2. Add the sourdough starter, yoghurt, water, egg and oil. Mix well just until combined. Do not overmix.

3. Heat a non stick pan at medium-high heat. Once the pan is hot add few drops olive oil.

4. Pour 1/4 cup pancake batter. Cook until the pancake starts bubbling on top, then flip it.

Cook for an additional 1-2 minutes or until the pancake is cooked through.

5. Serve warm with jam , honey or with topings of your choice!
