 Savory Whole-Wheat Cheddar Cheese Muffins



Looking for  healthy muffins?  Are you a Cheese Lover? 


Just 15 minutes of effort is all that stands between you and and a fresh, yummy batch of these! 


You can pair them with anything at any meal! 





Ingredients:


1  1/2 - 1  3/4 cups Brown Whole-Wheat Flour 

NOTE : You can use any kind of flour. The amount of flour depends on your flour type. You may need more or less to reach a thick cake-batter consistency.

 1 tablespoon baking powder

1/4 teaspoon salt


1 cup Kefir or Greek-style Yoghurt 

1/2         tablespoon         baking soda

 2            eggs

50 ml     olive oil

50g-60g       Cheddar Cheese,  coarsely grated or cut in small cubes.  Sometimes I use Feta Cheese.


You can add your favourite dry herbs too. I often add dry Basil, Oregano or Sun-dried Tomatoes.....


Directions:


Preheat the oven to 180℃. 


Combine the flour, baking powder, salt in a large bowl. Add the cheese and blend well. Make a well in the center of the mixture.


In another bowl combine the eggs, yoghurt + baking soda, olive oil and add the mixture to the dry ingredients, stirring until just moistened and no flour streaks remain. DO NOT overmix!


Spoon the mix into non-stick silicone muffin cups or muffin tins that have been sprayed with a non-stick spray, filling 2/3rds full.


Bake for about 30 minutes or until done and golden brown. Let cool in the muffin cups on a wire rack for 10 min. 

Remove the muffins onto wire rack and let them cool.




You can store them in an airtight food storage container in the refrigerator or leave them out for one or two days.
