Vegan Cinnamon Biscuits
Aromatic and delicious biscuits...
You can still enjoy some excellent sweets during Lenten or "fasting" period. These biscuits are dairy-free and do not contain eggs, so you can enjoy them guilt-free. 
You will need : 
 2 cups Wholemeal Flour
 2 1/2 teaspoons Baking Powder
 3-4 tablespoons Soft Brown Sugar
 1/4 teaspoon salt
 1 teaspoon Cinnamon powder
 1/4 tsp Nutmeg powder
 1/4 tsp Clove powder
  Vanilla
 60 g Coconut oil, cold
 (refrigerated) !!!
 3/4 cup cold Almond or Coconut milk ....
 You can add  1/2 cup raisins (optional) ....
INSTRUCTIONS
Preheat oven to 220C.
In a big mixing bowl combine the dry ingredients and whisk very well. 
Add the cold coconut oil.  
Use a fork to cut the coconut oil into the flour until the mixture is like fine crumbs.
 Stir in the cold milk until a soft dough forms and no longer sticks to the bowl.
Knead the mixture until combined, but do not over-knead.
Turn the dough out onto a cutting board that has been lightly dusted with flour. 
Gently roll the dough out until it reaches a 1,5-2 cm thickness. Use a cookie cutter to cut out the biscuits, and transfer to a baking sheet.
Bake for 10 minutes, or until the biscuits have risen and begin to brown on top.
Remove from the baking sheet and let cool on a wire rack.
Store in an air-tight cookie jar ....
