Simple Homemade Biscuits
Wholemeal Biscuits...
Crunchy and delicious, made completely from scratch.
Follow this easy, simple recipe and enjoy your biscuits with a hot cup of tea, coffee, wine or just with butter, cheese, jam or honey.
Ready for less than an hour!
Ingredients:
100 g Fresh Anari Cheese (Ricotta or Fresh Soft Cottage Cheese), room temperature
50 g Butter, room temperature
200 g Wholemeal Flour
1/2 teaspoon Baking Powder
a good pinch of Salt
2-3 tablespoons very cold water (you can use kefir, milk ot fresh cream instead of water)
Method:
* Preheat the oven to 180 C (160 fan). Line a baking sheet with baking paper.
* With a kitchen blender (or with a fork) blend together the Ricotta Cheese and Butter until smooth and very well combined.
* Stir well the Flour, Baking Powder and Salt. Add the Flour gradually to the Ricotta mixture until you have a mix resembling breadcrumbs.
* Add the water and combine very well until the mixture comes together in a dough ball.
* Dust a work surface with flour and roll out the dough to 1 cm in thickness. Use a cookie cutter to cut the biscuits in your favourite shapes and sizes ...
* Place on a baking sheet and bake for about 15-20 minutes, until golden and cooked.
* Lift off the baking tray and leave to cool completely on a wire rack.
