Wholemeal Ricotta Cheese Waffles

Look no further... These Ricotta Waffles are the BEST! They’re perfectly crisp on the outside, fluffy on the inside and loaded with vanilla flavour... 

They are delicious and you can pair them with almost everything....


Just few ingredients...


Wholemeal Ricotta Cheese Waffles  


Ingredients:

(for about two portions)

200 g Fresh Ricotta Cheese ( I use Cyprus Anari Cheese. You can use any Fresh Soft Cottage Cheese)

2 Eggs

1 tablespoon Light Brown Sugar

1 sachet Vanilla Sugar

70 grams Wholemeal Flour

30 ml Milk

30 grams Butter (melted)

1 teaspoon Baking Powder 

A good pinch of Salt


Method:

1. With a kitchen blender, blend together the Ricotta Cheese, Eggs, Sugar and Vanilla sugar until smooth and very well combined.

2.  Stir well the Flour, Baking Powder and Salt. Add the Flour gradually to the eggs-ricotta mixture. 

3. Mix the milk and melted butter. Add very carefully and gradually to the batter. Stir well but do not overmix! 

4. Preheat your waffle iron, grease with butter and cook the waffles until crisp and golden brown.....

For the size of my waffle iron I use a heaped teblespoon per waffle, but the quantity may vary, depending on your waffle iron ..... 

Often I just make mini waffle-bites...  just a teaspoon per mini-waffle....

Serve with topings of your choice!

My favourite toping is my Homemade Raspberry Jam ...
