Sourdough Dark Chocolate Muffins
If you are maintaining a sourdough starter and don’t want to waste the discard or you have a ton of starter and don’t know what to do with it… These yummy chocolate muffins are the answer!
Ingredients
1 ½ cups sourdough starter
1 egg
⅓ cup milk
2 tablespoons vegetable oil ( I used melted coconut oil)
1 sachet vanilla sugar
a pinch of salt
1 ¾ cups all-purpose flour (a mix of wholemeal and all-purpose flour works perfect in this recipe)
1 teaspoon baking powder
½ cup light brown sugar
1/2 teaspoon ground cinnamon
1 cup dark chocolate chips or chopped dark chocolate (I used 72% Cocoa Dark Chocolate).
Method:

Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 12-cup muffin tin (you can use muffin liners or muffin silicon cups).

Mix very well flour, baking powder, salt, sugar, vanilla sugar and cinnamon. Set aside.
3.
In a large bowl combine and whisk well the sourdough starter, egg, milk and oil.
Stir in the flour- sugar mixture until just combined.
Fold in the chocolate chips.
4.
Fill muffin tins/cups about 2/3 of the way full.
Bake at 200 C for 20 to 25 minutes or until muffins are ready and golden brown.
